Handcrafting
of fine
wine
is an
art
form
at Croze
Winery.
Each
year
the
grapes
provide
a unique
challenge
for
Croze
Winery
that
requires
new
solutions
to bring
the
wine
to its
greatest
potential.
Grapes
are
gently
crushed
and
stemmed,
leaving
many
whole
berries
and
fermentation
is slow
and
cool
to enhance
the
fruit
flavors.
The
grapes
are
always
handled
gently,
to avoid
extraction
of harsh
tannins.
Wine
is aged
in French
oak
barrels,
chosen
to compliment
the
special
characteristics
of Cabernet
Sauvignon
grapes.
These
methods
create
a Bordeaux
style
wine
that
is ready
to drink
at release
but
will
continue
to improve
for
years
to come.
Croze
Winery
1998
Cabernet
Sauvignon
The
grapes
came
from
two
Napa
Valley
vineyards.
40%
came
from
very
old
vines
at the
southern
end
of the
growing
region
and
60%
came
from
younger
vines
at the
northern
end,
some
twenty
miles
away.
The
1998
CROZE
Cabernet
Sauvignon
has
evolved
into
a silky,
elegant,
Bordeaux
style
wine.
Ripe,
fresh
fruits
dominate
the
flavors
with
a bit
of spice
in the
background.
The
nose
evokes
notes
of dusty
rose
and
cherry
with
a hint
of toast
and
Earthy
overtones.
The
finish
is long,
with
lingering
accents
of fruit
and
spice.
The
1998
CROZE
Cabernet
Sauvignon
has
the
structure
for
extended
aging
without
the
harshness
of drying
tannins.

1999
Cabernet
Sauvignon
100%
of the
grapes
are
from
the
Longwood
Ranch
at the
southern
end
of the
growing
region.
These
ancient
vines
produce
small
yields
of superb
grapes.
The
1999
CROZE
Cabernet
Sauvignon
has
a nose
reminiscent
of dried
roses
and
ripe
black
cherries,
dried
roses
and
a hint
of toasted
oak
are
balanced
with
sufficient
acids
to prepare
the
palate
for
the
next
bite
of roast
beast.
The
finish
is agreeably
long
and
abundant.
The
middle
palate
shows
the
care
taken
in vinting
the
wine.
